I bought a pound of ground turkey on a whim the other day. I wanted to try substituting it for ground beef since its leaner. I went onto allrecipes.com, I love that site! And found an ‘interesting’ meatball recipe that called for turkey. I made some major and sweeping changes to it!!
1lb ground turkey
1 egg white
1/8c finely chopped onion
1/2tsp garlic powder
1/4 tsp black pepper
1 cube chicken bullion
1 cup water
1 (10.75oz) 98% fat free condensed cream of mushroom soup
1 stalk of celery chopped
1 small onion chopped (I just used the same onion that the 1/8c came from)
8oz sliced fresh mushrooms
Mix together turkey, egg white, onion, garlic powder and pepper. Form into meatballs. Place into a hot skillet- notice there is no oil? I did not need to use ANY. You may want to give the pan a light spritz, but the gravy is going to be made in the same skillet so if you lose any bits of meatball it wont be noticed, add in sliced mushrooms, celery and onion once the meatballs are mostly cooked. Once meatballs are browned add in water and bullion cube, stir until its disolved. Add in condensed soup and bring to a boil. You may want to add more water for a more ’soupy’ gravy. Simmer for 25-30 minutes. I served this over boiled smashed potatoes. My family really enjoyed these! I asked my husband what he thought and he said ‘It tastes sort of like Thanksgiving, its good.’ he didnt know it was turkey (hee hee!!) Ill definatly make this again!
Today I got a wonderful private message at a parenting board I frequent. It was much like the last message I got. It seems my weight loss and running journey has been noticed by a few people! A woman sent me a message today asking for more information on the couch to 5k program, and a few other basic questions. She is a bit lighter than I was when I started and she actually did week one day one today. I am SO proud of these ladies! Im thrilled that I could help in some way!
Ahhh SO good!! So I was talking with one of the members of my running club who couldnt make it to vegas on wednesday, and what do runners talk about besides running? FOOD! The Palm Restaurant came up, its inside ceasars palace, pretty close to Niketown where we all met up. I had walked past it twice and nearly slipped in my own drool on the second passing. The food looked fantastic! My friend mentioned he had a cookbook from there! And voila here is his version of Linguini and Clam Sauce. I made it tonight, thinking Id probably be the only one eating it but even my three year old asked for more! My two year old was too tired to eat and kept falling asleep in his highchair so his opinion hasnt been weighed, but my picky husband even said I could make this again! The *only* change I made was I used a generous spraying of olive oil on my non-stick pan instead of the teaspoon of olive oil. Not because I dont have olive oil in the house….I actually have about 3 gallons (yes gallons) but its all for my soap making buisness, so I just improvised. Oh I also used reduced fat parmesan cheese. It turned out SO well, there is enough left over for lunch for me tomorrow. Im not sure how Ill fight off my 3 year old, I might have to suck it up and share.
Since my kids had had some noodles and veggies for lunch I figured they should have some veggies with dinner too so I warmed up some corn, Im getting low on fresh, frozen and canned veggies, we have been going through them like crazy! I also made some warm garlic bread, I just cut the bread, shake on some butter buds and garlic powder and wrap in foil and stick it in the oven to warm and it turns out pretty good! And definatly low fat! This I think has been one of my best, if not my best low fat dishes so far. It tastes like its restaurant quality! My mom and step Dad are flying in from Canada in a couple of weeks, I am definatly making this for them!
