I love waffles, I love breakfast food!! I was really missing my waffles, pancakes are yummy and all but I always go overboard with the syrup so in an effort to cut down on my needless syrup consumption and waffle craving I decided I needed to figure out a low fat version of waffles!
I use Krusteaz brand complete pancake mix, I love it, its pretty much no fail. As is the mix contains 2g of fat in half a cup of mix and 210 calories which comes out to about 8.5% calories from fat. The same company also has a fat free version, although I have not been able to find it locally and give it a shot. So the waffle directions go as follows:
2 cups of mix
1.5 cups of cold water
2 tablespoons of oil
2 tablespoons of soybean oil (vegitable oil) is 28g of fat!!
The first time I tried making this lower fat I used half the oil, no noticeable difference! The second time I halved the recipe and instead of 1 tablespoon of oil I used a scant teaspoon. Hmm, still no difference! Then I tried it just straight up- water and mix. It does stick to my waffle iron a little. I just take a fork and pry one edge away and it all comes right off! I do NOT oil my iron either. I enjoy my low fat waffles with a bit of saskatoon berry jam on it, fat free as well and turns out to be a very satisfying mobile fast breakfast for me!
