Ive been craving potato salad since Easter.

4-5 medium potatoes
2 egg whites, hard boiled,chopped
1/3 c onion,chopped
1 c celery,chopped
1/4 c peas

1 cup fat free mayonnaise
2 tbs vinegar
1 tsp salt
1 tsp sugar
1/4 tsp pepper

Wash, peel (if desired) and quarter potatoes. Boil until tender, cool and cut into cubes. While potatoes are cooking hard boil the eggs- or if you are like me and have MANY left over in various pastel shades from easter, just pull them out of the fridge :)
Combine the mayo, vinegar, salt, sugar, pepper, onion,peas and celery in a bowl. Stir in the eggs and potatoes. Serve chilled. Mmmm YUM!
