My mom used to make this fabulous pistachio ’salad’ its always been one of my favorites but it was so not low fat, not in the least!

I was craving it in the worst way the other day so I decided to give it a diet make over.

Here is the new recipe!

One box of instant pistachio pudding (2g of fat per box)

One cup of cold skim milk (0 g of fat per box)

Two cans of pineapple, either tidbits or chunks, if you only have crushed that’ll work ok. Drain these well. (0 g of fat)

One cup of mini marshmallows( 0 g of fat)

Half a container of fat free cool whip (0 g of fat)

Directions:

Add the milk to the pudding mix in a bowl, stir until combined then place in the fridge until its set, about 10 minutes. Now dump in the drained pineapple, cool whip and marshmallows and stir until combined. This is best if it sits on the fridge overnight. The pineapple gets a little sweeter and the marshmallows plump a bit. Its not the healthiest thing in the world but its SO good. It’s a nice occasional treat. The original recipe called for an entire tub of cool whip, lots more marshmallows and only one can of pineapple, which results in a much more ‘fluffy’ but less healthy dessert.

Hey guess what!? My weight this morning was 154.8!! My new lowest wieght! Yay for healthy low fat eating and moderate exercise. Speaking of which I am hopping on the treadmill for a post race run this evening. I think Ill run 3 miles at a moderate pace and maybe do some hill work, I love the feeling of powering up a big hill, its a GREAT work out!

I also slipped on an outfit I never would have imagined I would be fitting into! My top today fit nicely- a size Large Juniors and my shorts are a size XL Juniors and MILES too big! How absolutly FUN is shopping when cute clothes are TOO BIG!

This past week I hit 156.0 lbs, my lowest weight since September 2002! I forgot to weigh myself this morning, but this afternoon I weighed myself clothed and came in at 156.6lbs. Im happy with that all things considered. Low fat eating is really becoming ‘normal’ for me. I dont have to think through every single morsal anymore. I feel like Im being drawn towards healthier choices! Ill be sure to weigh in tomorrow and see what progress Ive made since last week.

Yesterday we attended a baby shower and it was easy to say no to cake, wow, I never figured Id say that! I also easily passed on the high fat ’salads’ and meatballs. Instead I went for a slice of a giant sub with mustard, no mayo and I gave the cheese and olive to my boys. Im happy with how I did! I even got some exercise in, even after my 5k race that morning I thought a little running around with the kids would do me good. I ‘caught’ one of our friends daughters snagging some icing off one of my boys cupcakes and so that began a huge game of chase and tickle with her and my boys. It was a lot of fun! I love making a fool out of myself playing with kids! Its great exercise, and all the laughing and giggling really adds to the work out.

Ive been eating low fat for a couple of months now, and while it hasnt resulted in some miraculous weight loss I do have more energy to exercise and I have lost several inches. Ive also found that I dont miss a lot of the fat I used to eat. I do miss peanut butter and greasy pizza a lot but thats really it. I definitely feel better than I have in years, Im going to continue eating low fat and once I have a little knee issue resolved I can get back to exercising regularly. I am also going to look into weight watchers to see if it is compatible with eating low fat. From what I understand of the points system it makes counting calories much much easier!
