I found that Krusteaz brand complete pancake mix makes a great waffle mix, its low fat too if you dont follow the waffle directions. 1 cup of water and 3/4 water combines is all you need. The mix contains 2g of fat in half a cup of mix and 210 calories which comes out to about 8.5% calories from fat. I added 1tbs of cocoa powder and 1tbs of splenda to the mix and it turned out to be a great lightly chocolate flavoured waffle. A dollop of fat free whipped cream would be absolutly sinful on this.
My oldest son asked for grilled cheese sandwhiches for lunch. I hadnt made them in ages, someone at preschool must have said something about them. So I made each of the boys one and thought wow…those sure do look good! The I rememberd I had picked up some parkay spray ‘butter’ and I had fat free cheese slices in the fridge. Well heck ya! I gave it a shot.
I used two slices of SaraLee Delightful Wheat bread- two slices are 90 calories and 1g of fat, the butter spray has 0g of fat and 0 calories per serving (5 sprays?) and one slice of Lucerne fat free american cheese which has 30 calories and 0 g of fat. My pan was hot and I sprayed three sprays on each side of the bread before I put it in the pan. It browned up nicely and was really light and very yummy! 120 calories and 1g of fat. I had a few pieces of dried pineapple along with a cup of skim milk. So good!!
Ive been craving potato salad since Easter.
4-5 medium potatoes
2 egg whites, hard boiled,chopped
1/3 c onion,chopped
1 c celery,chopped
1/4 c peas
1 cup fat free mayonnaise
2 tbs vinegar
1 tsp salt
1 tsp sugar
1/4 tsp pepper
Wash, peel (if desired) and quarter potatoes. Boil until tender, cool and cut into cubes. While potatoes are cooking hard boil the eggs- or if you are like me and have MANY left over in various pastel shades from easter, just pull them out of the fridge ![]()
Combine the mayo, vinegar, salt, sugar, pepper, onion,peas and celery in a bowl. Stir in the eggs and potatoes. Serve chilled. Mmmm YUM!
This was pretty easy for me, I love a good veggie pizza, but if you are a meat lover there are some lower fat alternatives out there. One Ive bought in the past is turkey pepperoni. It has 70% less fat than regular pepperoni!
My recipes for tonights pizza was pretty darn simple:
1 great value brand pizza crust- each serving has 2g of fat and 170 calories per serving (a quarter of a pizza) prepared per the package directions. Except for the ‘greased’ pie pan. I sprayed a very quick spritz of olive oil and then dusted liberally with whole wheat flour. I forgot to buy cornmeal.
Pizza Sauce- watch the fat in these, they can be pretty high!
veggie/fruit toppings: pineapple, fresh mushrooms and fresh tomatoes
Fat free mozzerella cheese- seriously I didnt have high expectations on how this would melt up, I have vague memories of nasty melty cheese from when I was a kid, I always associated it with low fat/ fat free cheese (but I could be wrong?!) so When I peaked into the oven I was slightly shocked to see nice, thick, bubbly cheese. My husband told me next time he wanted some of my (FAT FREE) cheese on his pizza (I made a few small ones) I used Kraft brand, already shredded. Super convienent! I was totally impressed!
I stuck it in the oven at 425 for about 25 minutes. I was happy with my low fat pizza! Definatly a make again! I may next time try it with a home made version of pizza sauce that is much lower in fat and I will probably pick up some low or fat free cheddar cheese to add to the mozzerella.
I bought a pound of ground turkey on a whim the other day. I wanted to try substituting it for ground beef since its leaner. I went onto allrecipes.com, I love that site! And found an ‘interesting’ meatball recipe that called for turkey. I made some major and sweeping changes to it!!
1lb ground turkey
1 egg white
1/8c finely chopped onion
1/2tsp garlic powder
1/4 tsp black pepper
1 cube chicken bullion
1 cup water
1 (10.75oz) 98% fat free condensed cream of mushroom soup
1 stalk of celery chopped
1 small onion chopped (I just used the same onion that the 1/8c came from)
8oz sliced fresh mushrooms
Mix together turkey, egg white, onion, garlic powder and pepper. Form into meatballs. Place into a hot skillet- notice there is no oil? I did not need to use ANY. You may want to give the pan a light spritz, but the gravy is going to be made in the same skillet so if you lose any bits of meatball it wont be noticed, add in sliced mushrooms, celery and onion once the meatballs are mostly cooked. Once meatballs are browned add in water and bullion cube, stir until its disolved. Add in condensed soup and bring to a boil. You may want to add more water for a more ’soupy’ gravy. Simmer for 25-30 minutes. I served this over boiled smashed potatoes. My family really enjoyed these! I asked my husband what he thought and he said ‘It tastes sort of like Thanksgiving, its good.’ he didnt know it was turkey (hee hee!!) Ill definatly make this again!
