Besides a good veggie Pizza and McDonalds Big Macs I love me some KFC chicken! But those arent exactly in the relm of healthy…and certainly not low in fat no matter how you cut it. A friend of mine gave me a recipe he created that was his much lower fat version of KFCs chicken, you can get the recipe here in his blog, there is even a picture. Mine looked pretty close! Im feeling very domestic after this turning out so well! Ive got to be careful or my husband is going to expect these awesome meals from me every night! And that just isnt going to happen.When I checked out the recipe I thought hmmmm….that cant be it. It was way too simple. But I made it for dinner tonight and it was spot on for flavour and had a great crunchy texture without being fried or having the skin on. The recipe calls for MSG, which I have never purchased before. I stood in the spice isle of the market for almost forever before I finally found it!! I used ‘Accent flavor enhancer’  click on it to see what you are looking for if you havent bought MSG before, youll be able to find it much easier if you know what you are looking for! I made corn, mashed potatoes and (not from scratch) gravy. I think I officially consumed about 300% of my recommended daily intake of sodium. But it was SO worth it!! This will definatly be a make again recipe, next time Im going to experiment with the salt by cutting it by half. Ill be sure to review that change here when I try it.
