Super Low Fat Banana Bread
1 1/2 c all purpose flour
1/2 c sugar
1/4c splenda
1 1/4tsp baking powder
1/2tsp baking soda
1/2 tsp ground cinnamon
2 egg whites
1tsp vanilla
1 1/4c very ripe banana, mashed
1/4c applesauce
Preheat oven to 350F
In a large bowl combine dry ingredients. Add egg whites, vanilla, egg whites and applesauce. Stir until combined, dont over stir! Pour batter into a non-stick 8X4 loaf pan
Bake for 50-55 minutes until done.
Yummy additions:
My boys love dried blueberries in this! We have also tried dried pine apple and bits of apple with a lot of success. We generally add no more than half a cup of fruit to one loaf.
This comes out with a really good banana-y taste for being so low fat. Its not super dense or heavey like traditional high fat banana bread but this definatly hits the spot. All the teachers at my sons preschool have asked me for a copy of this recipe. I bring it in for snack about once a month. If a classroom of 3 and 4 year olds approve its nearly a miracle! This is a fantastic recipe!
